~2 cups grated zucchini
~4 cups flour
~1/2 cup cocoa
~1 1/2 cup sugar
~1 tsp baking soda
~1/2 tsp baking powder
~3/4 tsp salt
~1 tsp cinnamon
~1/2 tsp nutmeg
~1 1/2 cup oil
~3 eggs
~1 1/2 cups milk
~2 tsp vanilla
~1 cup semi-sweet chocolate chips
Preheat oven to 350. Butter/grease 2 (8x4) loaf pans
In a large bowl combine flour, cocoa, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside. In a mixer, mix oil, eggs, milk, and vanilla. Add grated zucchini. When mixed well, add dry ingredients to wet mixture. Mix until just blended. Add chocolate chips.
Pour batter into prepared pans. Bake until toothpick comes out clean from center of loaf. About 1 hour 15 minutes. Cool on rack for ten minutes. Remove from pan and then finish cooling completely.
