Coconut No Bake Cookies


  • 2 cups Sugar
  • 1/2 cup milk
  • 1/2 cup butter, cubed
  • 3 cups quick cooking oats
  • 1 cup coconut flakes
  • 6 tablespoons baking cocoa
  • 1/2 teaspoon vanilla extract


1. In large saucepan, combine the sugar, milk, and butter: bring to boil, stirring constantly. Boil for 2 minutes. Remove from heat. Stir in the oats, coconut, and vanilla.

2. Working quickly drop by rounded tablespoonfuls onto wax paper. Let stand until set, about an hour.

Bon's Tortilla Soup

I took two recipes and made up my own. 
It turned out delish!

  • 4-5 boneless chicken breasts (cooked)
  • 1 TBSP olive
  • 1 tsp. minced garlic
  • 1/2 tsp cumin
  • 2 (14.5 ounce) cans chicken broth
  • 1 can of corn drained
  • 1 whole onion (chopped)
  • 1 tsp.chili powder
  • 1 1/2 tbsp. lemon juice
  • 1 jar chunky salsa
  • 1 can northern beans
  • 1 can black beans
  • 1 cup Monterey Jack Cheese
In large crock-pot  toss all of the above ingredients together. Mix together. Turn to high for the first hour and then to low for 4-6 hours.
Serve with more shredded cheese, tortilla chips, and sour cream.

Easy Choco-holic Chocolate Chip Cake

This cake is simply easy, divinely delish, and incredibly moist!

  • 1 (18.25 ounce) package chocolate cake mix
  • 1 (3.9 ounce) package instant chocolate pudding mix
  • 1 cup vegetable oil
  • 4 eggs
  • 1/2 cup hot water
  • 1 cup sour cream
  • 1tsp. vanilla extract
  • 1- 1 1/2 cups of semi sweet chocolate chips

Preheat oven to 350 degrees. Greas and flour a bundt pan. Combine all ingredients, except chocolate chips, and beat until smooth. Stir in chocolate chips. Pour batter into prepared pan. Bake for 1 hour. Allow to cool before you turn out! 
I serve this with some yummy homemade chocolate buttercream frosting!

Chocolate Buttercream Frosting
  • 6 tbsp. butter
  • 1 cup powdered sugar
  • 4 tbsp. cocoa
  • 2 to 3 tbsp. milk
1. Cream butter.
2. Combine sugar and cocoa.
3. Add sugar and cocoa mixture to butter
4. Add milk to and butter mixture. I would start with 2 tbsp. of milk and if it's too thick add another tbsp. of milk. I like mine thinner for a delicate drizzle on the cake!
